Norma's Chicken Salad Recipe
This is a sacred post.
For all my girls back in (or away from) Pensacola...
Norma Murray is a fabulous chef and owns three (well, now two...) local restaurants called "Norma's." Simply put, it's the place you go to with your grandma and mom for lunch to catch up. Chicken salad, fruit salad, gumbo, bread pudding - traditional Southern fare. Her cookbook, "As Always" is available for sale here.
And here is her AMAZING recipe
Norma’s Chicken Salad Must (be refrigerated)
Mix dressing ingredients in a large bowl.
¼ c. lemon juice
¼ c. chicken base (comes in a jar, by the soup/boullion)
½ gallon mayo
Add:
8 c. chopped chicken
2 c. diced celery
Serve over field greens
Sprinkle with toasted almonds
